Sunday – Super Bowl Party!!! I’m making gluten free sausage balls. Hopefully they will be as good as glutened ones. (Is glutened even a word?) (I just made it one! Ha!)
Monday – So, back around my husband’s birthday, I discovered I like grits (because he requested shrimp and grits for his birthday supper.) IF you cook them in chicken stock. And add cheese. Oh. My. GOODNESS. So yummy. So, I’ve been on the look out for more grit including recipes. My mother-in-law gave me Mark Bittman’s How to Cook Everything FAST for Christmas, and there is a recipe for Polenta with Sausage and Mushrooms. I’m going to alter it by using stew beef instead of sausage (cause I’m just not a fan of Italian sausage) and see how it is.
Tuesday – Another recipe from How to Cook Everything FAST tonight. Skillet Meatloaf. Mark swears there will be more crispy bits. YUM. Will also have potatoes (because hello? Meatloaf begs for potatoes!) and asparagus. Roasted asparagus. With lots of garlic. Heaven!
Wednesday – Wednesday features a recipe I found on Pinterest. Roasted Shrimp with Broccoli. I am serving with rice for me, probably pasta for the kids. Butter, shrimp, broccoli, and rice. All I can say is I can’t wait.
Thursday! – No cooking!
Friday! -No cooking!
Saturday – I’m not sure yet! It’s so far away. Since we won’t have to go Super Bowl Party shopping and it will probably be cold, I’m thinking it will be a good time for a big bowl of chili. With gluten free cornbread, of course.
Last week notes: Last week my fabulous hubby did all the cooking. I was down with a stomach bug the first part of the week and had no appetite, so he stepped up. Isn’t he grand? We had sauerkraut and sausage on Monday, spaghetti on Tuesday, and Wednesday he made salmon with rice and zucchini. I would love it if he would do that more often!
